Cicciano
A 3ft (0.9m) tower of profiteroles crafted with hand-marbling of Amedei, Chuao Dark, Toscano White and Toscano Milk chocolate - as far a fine chocolate goes, it doesn't get any better! The tower is then dressed with Red Passion roses.
Monza
A simple but very effective croquembouche enrobed in Amedei Toscano white chocolate. Minimally decorated with fresh Red Passion roses. This croquembouche was delivered to the prestigious restaurant of Raymond Blanc - Le Manoir aux Quat'Saisons.
Verona
As featured on BBC2's The Great British Wedding Cake. Also seen on "Gavin & Stacey", episode 4, series 1. This croquembouche stands at 1m high. Each profiterole is hand-dipped in Valrhona Guanaja 70% dark chocolate and then hand-piped with Ivoire 35% pure white chocolate. Finally, the tower is decorated with hand-made pure chocolate flowers.
Brescia
This croquembouche stands 1m high. Each profiterole is dipped in Valrhona Ivoire 35% white chocolate and then piped with lilac coloured pure chocolate. Finally, the tower is decorated with hand-made chocolate butterflies.
Lucca
Profiteroles are filled with a Valrhona white chocolate mousse then dipped in Valrhona milk chocolate before assembling into a tower. Valrhona white chocolate is delicately frilled and nestled amongst the profiteroles.

1.2m (4ft) high tower of profiteroles. Each profiterole is hand-enrobed in Amedei Toscano white chocolate and then hand-piped with Amedei Toscano pure dark chocolate. The tower is then decorated with pure chocolate flowers. Ideal as dessert.

Each profiterole of this 1.2m (4ft) high profiterole tower is dipped in Valrhona milk chocolate. Finished with hand-made truffles and chocolate flowers.

This 4ft (1.2m) high profiterole tower is nestled on a frill of white chocolate. The tower is made up of profiteroles hand-enrobed with Valrhona caramel milk chocolate with white chocolate piping and finished with pure chocolate flowers.

This croquembouche stands 1.2m (4ft) high. Each profiterole is dipped in Guanaja 70% dark pure chocolate. Finally, the tower is decorated with a hand-made Ivoire 35% white chocolate ribbon cascading from the top down and hand-made white chocolate fans.
